Great memories of my childhood which mix with a life spent around Asia

Today we present at Scalini a couple of dishes that will accompany us throughout the Winter here in Bangkok until Spring when we will change with lighter and less cold colored ingredients

So we will find from the duck Ragu with pecorino cheese, to a Tomino cheese wrapped in bacon and finish with the classic Nicola’s dessert which will undoubtedly keep us company even in summer.

As usual I looked for a meeting point between two different cultures and points of view.

Pasta with Beans like my father does with a sweet balsamic vinegar granola and theGuanciale ham which meets the local taste but doesn’t get too far from the my roots.

Fantastic cannellini salad which accompany the mackerel lacquered in soy sauce and black beluga lentils.

Last note about the ravioli with chestnut and pumpkin with chopped nuts, Porcini powder and Parmesan cream.
