Every time that I begin to think about the recipes for a wine dinner, it is always a mix emotions with different feelings.
I let myself be guided by the wine and I try to follow its tone and I get lost in a sea of ingredients.
It is very difficult to explain what there is inside the head of a chef when he began to create and enjoy food with your mind.

There are a couple of ingredients that really worth to highlight like the marinated salmon served in tin of caviar sorbet with yuzu and sake, or the pig cooked at low temperature and floured in the leek burned (which people commonly call “Leek Ash”. If I had never been in japan, I would not have ever seen it ).
And what about the Gift autumn forest? A work of art thanks to the inspiration from Ferran Adria who made us know a world otherwise unknown to us; The forest is a composition of various chocolates with different textures which once mixing in the mouth give a feeling of autumn.
I have to thank again and again my kitchen team as this time they were formidable in expressing this journey of emotions mixed with the flavors of my land and theirs.
