Marinated green apple millefoie, baby langoustine, vegetable pearl, Mediterranean Sea salt, Sicilian orange dressing

Sicilian orange dressing:
Mix well all ingredients in a bowl to get the dressing.

Green apple mush:
Slow cook all ingredients at 85°C for 30 minutes in a vacuum pack.
Cool down in ice water. Open the pack, take out star anise, cinnamon, vanilla bean and blend the rest very well.

Green apple millefoie:
Slice thinly the apple to make a long line. Place into 15cl ice water with 5cl lemon juice.

Vegetables preparation:
Peel the carrot, zucchini and turn tips using a peeler.
Using a knife to round them one by one and put inside 3 different vacuum packs together with extra virgin olive oil, salt, pepper and thyme.
For carrot: cook at 85°C for 15 minutes.
For zucchini: 85°C for 10 minutes.
Turn tips: 85°C for 8 minutes.
Then, sautéed all 3 of them with shallot, garlic, white wine, salt and white pepper in a medium-sized saucepan over medium heat for 1 minute until crispy.

Baby lobsters:
Incise the body of baby lobsters and clean well.
Pan-sear the baby lobsters using a skewer with a film of olive oil, salt, white pepper over medium for 4 minutes in a saucepan.
Deglaze with Vodka and cook in oven at 160°C for 4 minutes until medium rare.

Finish and presentation:
Place the green apple mush in the center of a plate.
Put the pearl vegetables around, sautéed baby langoustine on top. Finish with green apple millefoie and present nicely the Sicilian dressing and local mixed leave.

  • Orange juice 5gr
  • White pepper 3gr
  • Thyme 5gr

Green apple mush:

  • Star anise 2gr
  • Cinnamon ½ piece
  • Vanilla bean 2gr
  • Water 25gr
