I had a great week working with Michelin-starred chef Michele Dell Aquila, who’s currently Chef de cuisine of Aurora restaurant, Altira hotel in Macau. I would say he’s one of the top talented young chef I’ve ever worked with. Passionate, smart, creative… I’ve learnt so much from him. Michele combines perfectly Italian’s signature ingredients with Asian techniques, creating his own contemporary Italian cuisine. His dishes have perfectly dedicated flavours and beautiful colours.
